Goats’ cheese, Parmesan and hazelnut biscuits

160g plain flour
35g butter
75g fresh goats’ cheese
2tbsp freshly grated Parmesan
50g hazelnuts, finely chopped
2-3tbsp double cream
½tsp finely chopped thyme


Place the flour in a bowl with the butter and goats’ cheese and rub the mixture together by hand, as you would normally when making pastry.Add the Parmesan and chopped hazelnuts, then season with salt and freshly ground pepper.
